SPRING TARTS • What better way to enjoy the season’s fresh produce than with a scrumptious slice of tart?

SPRING VEGETABLE TART • Ready-made puff pastry is very easy to use and is a quick way to make a delicious and attractive tart. You can vary the topping for this tart by using other vegetables that are in season, such as sliced sweet peppers, courgettes or mushrooms.

COURGETTE AND CARROT QUICHES • We used shortcrust pastry to make these mini quiches filled with vegetables. Try to handle the pastry as little as possible and make sure the dough has time to rest in the fridge before you are ready to roll it out. Blind baking the pastry before the filling is added helps to keep it crisp.

ROASTED STRAWBERRY PHYLLO TART • Phyllo pastry is very easy to work with if you follow our quick steps. Use sweet ripe strawberries and serve with ice cream or whipped cream for dessert.

DREAMY CHEESECAKE • This rich cheesecake with fruity flavours and a white chocolate base is a decadent treat for any occasion. Follow our steps to create this beautiful no-bake delight.
